A powerful, richly Sherried Islay single malt from Signatory’s iconic Cask Strength Collection. Distilled in 2007 and matured for 17 years in a first‑fill oloroso sherry butt, this release marries Caol Ila’s clean, coastal smoke with deep, indulgent sherry character.

Aroma
A wave of dried fruits — sultanas, dates and dark raisins — wrapped in maritime peat smoke. Beneath that, hints of toffee, roasted nuts and damp oak add weight and complexity.

Palate
Full‑bodied, oily and intensely flavourful. The oloroso cask brings molasses, treacle, dark chocolate and spiced fruitcake, balanced by Caol Ila’s signature sweet peat, brine and gentle medicinal notes. A touch of burnt orange and smoked almonds adds lift.

Finish
Long, warming and satisfyingly smoky. Lingering notes of embered peat, dried figs, cocoa and seasoned oak, with a final flicker of salty sweetness.
