A long‑established Limoux specialist, J. Laurens builds Les Graimenous from higher‑altitude fruit and a blend of Chardonnay, Chenin Blanc, and just a splash of Pinot Noir and local variety Mauzac, fermented cool and aged on lees in bottle to bring finesse without heaviness. The approach is deliberately clean and modern: precise base‑wine handling, restrained dosage, and a focus on freshness over creamy weight.

The wine is bright and neatly defined, showing lemon zest, crisp apple, and a touch of white blossom, with the lees adding just enough softness to round the edges. The palate stays taut and lively, finishing with a gentle mineral snap that keeps it refreshing and very Limoux in character.
