Hollick Estates Sparkling Merlot / 2020 / 75cl

The Hollick Sparkling Merlot is a twist on Australia’s unique sparkling red wine category, which tends to be dominated by Shiraz. Utilising this classic grape from its Coonawarra vineyards in a new way has made it evident that Merlot lends itself ideally to wines of this style. Intense fruit flavours and soft structure carry through its secondary fermentation, creating a thoroughly appealing sparkling red wine. The base wine for the Hollick Sparkling Merlot is fermented as usual for dry red wine, and matured in two-year-old French and American oak for eighteen months prior to re-fermentation. The resultant wine is liquered to a predetermined sweetness upon final packaging, and is recommended for further bottle maturation.
