Simonnet‑Febvre, one of Chablis’ oldest houses, has been rooted in the region since 1840 and is particularly known for its historic work with traditional-method sparkling wines alongside a focused, terroir‑driven Chablis range. Now under the stewardship of the Latour family, the domaine continues to champion purity, precision and the classic Kimmeridgian and Portlandian limestone signatures that define the area. Their Petit Chablis parcels sit on the higher, wind‑brushed slopes around the village, giving fruit with bright acidity and a clean mineral edge.

The wine opens with lifted aromas of lemon zest, green apple and white blossom, underpinned by a subtle chalky freshness. On the palate it’s brisk and finely etched, offering a lively citrus drive and a gentle saline snap that keeps everything taut and refreshing. There’s no oak to distract from the clarity of the fruit; instead, the wine leans into its crisp, stony character, finishing with a mouthwatering minerality that makes it an effortless aperitif and a natural partner for shellfish or light seafood dishes.
