Valdespino Vermouth Herencia / 75cl

Drawing on Valdespino’s long mastery of oxidative Sherry, Herencia is built on a foundation of mature Oloroso, giving the vermouth an immediate depth and savoury complexity. The nose is layered and expressive: orange peel, chamomile and dried herbs woven through with walnut, warm spice and that subtle caramel‑oxidative lift that only well‑aged Oloroso can bring. It feels both classically vermouth‑like and unmistakably rooted in Jerez.

The palate is smooth, bittersweet and richly textured, balancing citrus, quince and spiced apple with a firm herbal backbone. Notes of clove, gentian and roasted nuts carry through a long, gently warming finish, where the Oloroso’s nutty, saline character lingers. It’s a distinctive, beautifully judged vermouth — complex enough to sip over ice, yet structured and aromatic enough to elevate a cocktail.
